Yesterday I was having a craving for peanut butter chocolate chip cookies so I went to my favorite resource for cookies, Smitten Kitchen, and found this delicious recipe.  When Jack woke up from his nap we got out all of our supplies and got to bakin'!!!!  These, like most cookies, were really simple to make.  But let me tell you....they are the BEST peanut butter chocolate chip cookies I have ever had.  Adam kept on saying that they were "stupid good".

The only change I made to the recipe is I did not add the peanut butter chips.  I didn't have any and they are not really my favorite.  Plus, I say the more chocolate the better!

One of us had a LOT of fun with the baking powder.  


Don't they look so good?  Trust me, they are.  I feel as though I should put up a little disclaimer though:  You will eat a lot of these.  I mean, a lot a lot.  I'm pretty sure I have gained five pounds of peanut butter cookie weight since making these.  So, so worth it.

...on things that make me happy

I'm a pretty easy person to please.  I get amused very easily.  Silly commercials, billboards...here is an example.  When we were living in Houston there was a nursery with a marquee out front-one day the marquee read "say aloe to my little fern".  I about died of laughter.  Even to this day it makes me laugh.  Anyways, a couple of funny things happened in the last couple of days.  Funny to me, that is.

First off, I have heard about the dreaded "poop in the bathtub" but we have yet to experience that with Jack.  Last night, however, we had a very close call.  Usually we get Jack undressed and let him play for a minute while the water is running.  Last night I was in bathroom and Jack was squatting down playing with some toys.  I looked over at him and there were two little Jack sized poops sitting right underneath his bottom.  It was so, so funny.  The best part is that once we got Jackson in the bath he looked over and said "poop.  chloe chloe poop".  He tried to blame it on Chloe!  Sweet little man!

Ok, funny thing number two.  Today I stopped in to target for three things (and left with three things!) and overheard a conversation between mother and daughter.  The daughter said, "mommy, I want to go to the toy aisle" and the mom replied, "honey, I don't think there is a toy aisle at this Target."  This made me smile.

This funny little guy decided to put on quite the show yesterday at the doctor.  Yes, those are his tiny toes touching his tiny head.  What a goober.

These pretty flowers always make me happy.  They remind me of our honeymoon and smell phenomenal.  


And finally, here is the little bump at 20 weeks.

...on apple fritters

Adam loves apple fritters so I decided it would be kind of a fun treat to surprise him with homemade apple fritters on the morning of his birthday.  I had never made them before but found this recipe and it didn't look too intimidating.  So-I went for it!  These were so easy and sooooo yummy that I thought it might be a good thing to share with friends.  

The hardest part about making these was the realization they they (along with all donuts) are fried in oil.  It's not that I didn't know it before, it's just that I never really thought about it.  You'd think this realization would have stopped me from eating so many-it didn't.  I opted to dip them in a glaze once they were finished but next time I think I might skip the glaze and just coat them with powdered sugar.

Seriously-try them out.  You won't regret it!

...on vacation

Jackson Hole.  Or, as Adam would probably call it "the happiest place on earth" was our vacation spot for this year just as it usually is.  This year the trip was a little bit different for a couple of reasons.  1.  We drove to Jackson (not unusual) with a 1 1/2 year old on tow (a first)  2.  We traveled with some friends of ours (who also have kids) and 3.  We stopped off in Denver at the end of it all to watch out gym's team compete in the crossfit regional competition.  The drive, quite honestly, was far better than I ever could have expected.  We caravanned almost the entire way up there and all of the kids did great!  



There is a little creek that runs through the community where we stayed and all of the boys loved it!  Jackson learned to throw pebbles in to the creek and had a great time exploring everything outside.  









All of the pictures above are from our hike to Taggart Lake.  We even had a furry surprise guest greet us on the trail!  Jackson LOVED the moose.  He loved being in the back pack, too.  Towards the end of this hike he was so tired but he wouldn't close his eyes because he didn't' want to miss anything.  



Adam and Ben met up with a guide one day and boot packed? or skinned? or something up this mountain and then skied down.  Not my idea of fun but, whatever.  They had a blast.  

So somewhere around here in the trip (in the middle of adventure day with the guide and the hike up death canyon) Adam and I celebrated out six year anniversary!  One of the perks of traveling with friends was that they were able to stay home with Jack while we went out on a date.  Adam and I got "dressed up" and went out to dinner in town to a super yummy restaurant called "trio".  We had seen it several times before and always wanted to try it but, being the homebodies that we are (even before Jack) we never did.  It was so nice to get out, talk, and celebrate together.  Also-the food was fantastic.  I don't generally get too impressed with restaurants but this place was seriously good.   





On our last day, the three of us hiked up death canyon.  Jackson decided to walk for a little ways and he actually did pretty well.  He did slow us down a bit but it's not like we were in a hurry.  Adam and I actually did this same hike when I was pregnant with Jackson and now he is hiking it himself-kinda.  

As always, we were not ready to leave.  Adam would seriously move to Jackson in a heart beat if we could.  I would totally follow him anywhere but it gets pretty cold there and it's probably one of the most casual places I have ever been.  I love that about Jackson-most of the time but every now and then a girl's gotta wear heels!  Know what I mean?

Our drive to denver was fairly uneventful but we had a great time watching the team and individuals from crossfit albuquerque compete in regionals!  If you ever want to feel really bad about yourself or get really motivated to get into shape-go to a crossfit competition.  Seriously.  I saw a lady there with probably a two or three month old baby who looked phenomenal.  Everyone there was seriously fit.  (my goal as soon as I pop this little kiddo out!)  I don't have any photos from the weekend but my Photographer husband was totally on it.  Check out the photos on his blog and be impressed...with the photos and the crazy strength of these people!

...on turning thiry

This guy turned thirty on Tuesday...


All in all, the day was pretty uneventful.  I gave him a few small gifts throughout the day and cooked us a nice dinner at night.  In fact, I did a lot of cooking on Tuesday including homemade apple fritters (yum!),


 cupcakes, 


and banana pudding.  There is no such thing as too much dessert on a birthday.  Especially a 30th birthday.  

I'm not really great at sappy, "oh, I have the best husband ever!" and what not.  In fact, that stuff generally drives me crazy when posted on social media.  BUT, I figured I would make an exception for today.  

So, happy birthday sweet Adam.  I love you and am thankful for your dance moves, your silly jokes, the nicknames you have for my clothes, the way that you push me even though I always get mad at you at first then thank you in the end, your goofiness, and the way that you love and take care of our family.  And many, many more things....

...on thursday threads

Last weekend I was fortunate enough to get a little alone time at the house.  It was very, very nice.  I made good use of my time by watching 27Dresses on tv and making two of these....

 

It is the tube scarf that I made, in case you were wondering.  I found a tutorial here and decided to give it a go.  Now, the cool thing about this project is that for both of the scarves it probably cost me about three or four dollars total.  You see, I bought this fabric at SAS when I was in Phoenix for I think 1.99 a yard.  The only tricky part about it was working with the jersey material.  I'm so excited about this one and I'm thinking I may need to make more!  Please excuse the fact that the scarf does not match what I'm wearing...I didn't want to change just to take the picture.  Speaking of taking the picture....there is a reason why I always chop off my head when I do self portraits in the mirror like this one.  Here it is in one word: AWKWARD!  Seriously people, teach me your tricks of how to take a non-lame self portrait like this one.  I see people do it all the time on their blogs and I just don't have the knack for it.  I think it looks like I'm about to laugh in this picture because in my head I was totally making fun of myself.  I think this picture was take number six or something like that.  

P.S.  The WOD today was a 5K.  I'm proud to say that I beat my time by two minutes.  Still averaging only about an 11 minute mile but hey-it's better than before!
